Journey Through China with Tattu: Szechuan

For the second instalment of our Journey through China dining series with contemporary Chinese restaurant Tattu, we will be travelling north west from Guangdong to the province of Szechuan, or Sichuan.

Guests will experience a six-course tasting menu paired with two cocktails, comprising of six exclusive dishes that are not available on any other menu at Tattu, created by head chef Jon Green featuring the ingredients and traditional cooking methods found in this ancient province.

“Szechuan-style cuisine is renowned for its bold flavours, particularly the pungency and spiciness resulting from liberal use of garlic and chili peppers in many dishes, as well as the unique flavour of the pepper that’s grown in the region,” Jon explained.

“We’ve taken the flavours and ingredient elements of Szechuan cooking and applied them in different ways to the menu for the evening, from the Mapo Doufo vegetarian dish to the clever pairing of Szechuan pepper with strawberries for the dessert. We’ve also created two cocktails in partnership with The Botanist Gin for guests to enjoy alongside the dishes that we think work really well with the balance of flavours,” he added.
