We’ve teamed up with Harvey Nichols to create a unique tasting menu that’s all focused around the humble pea.

Garden peas are indigenous to the UK and are a fantastic source of sweetness and texture, commonly used in a variety of traditional English fare. Often overlooked as a mere side dish, we felt this unsung hero of our culinary culture deserved a little more recognition.

As we move towards sustainable and seasonal dining, Spring is the perfect time to utilise these little green spheres packed with a plethora of vitamins and minerals.

Friday 8th March will see Harvey Nichols’ head chef Ervin Pongracz and head bartender Dominic Lehany put together an exquisite selection of dishes with a cocktail to match, that all utilise the flavours of the English pea.

On arrival, your palette will be teased with an elixir of nettle syrup, peppermint tea, lemon juice with pea-infused Roku gin and pea sherbet.

Pea and mint puree on toast with feta and bacon and a mini pea shepherd’s pie will whet your appetite for things to come.

An elegant and light pea mousse served with buttermilk and edible leaves will then follow. Pea and potato cake with cod and 62-degree egg will make up the third course of the night, finished off with a delicious beurre blanc and crisp pea shoots.

The penultimate course will consist of a pea cassoulet which will serve as the bed for a beautiful lamb rump which will be cooked rosy-pink to perfection. This will be topped off with a little tart crème fraiche.

Finally, the meal will be rounded off with a white chocolate and pea ganache, using the natural sweetness of the peas to compliment the chocolate, this dish will be accompanied by mint ice cream and pistachio dust.
