Signature Dish: Samosa Chaat at Scene Indian Street Kitchen

It’s back, and it is a corker! The next culinary delight in the spotlight of our ‘Signature Dish’ series is the Samosa Chaat at Scene. We spoke to executive chef Sudesh Singh who talked us through its components.

We hopped over to Scene Street Kitchen in the heart of Spinningfields to talk to Sudesh, and try the famous Indian street food samosa chaat, which is made up from pastry filled with spiced potato and peas, then topped with chickpeas and drizzled with an assortment of chutneys, and sweet yoghurt. The dish is finished off with Sev (crunchy noodles) and pomegranate seeds.

Samosa Chaat is a favourite street food dish which is eaten all over India, and as one would expect it is bursting with intense aromatic flavour from the abundance of spices. As you will see in the video, Sudesh cooks the dish over a scorching flame, which cooks everything quickly and adds a welcome caramelised tang.

“Pastry, stuffing and how you cook it” are the most critical aspect of the samosa according to Sudesh, and *spoiler* … the Samosa Chaat is deep fried. You really can’t go wrong with that.

Spicy, fragrant and crisp, it is apparent to see why these guys go like hot-cakes. Best get down there ASAP and see for yourself.
