Chotto Matte sets October date for its St Michael’s rooftop opening

The Japanese–Peruvian restaurant is opening its first Northern site in Gary Neville’s new landmark, complete with an all-year roof terrace.

When Chotto Matte opens at St Michael’s this October, it’s not exactly going to be a low-key arrival.

The Japanese–Peruvian restaurant is taking over the top floor of Gary Neville’s No.1 St Michael’s, a 502-cover space with a 348-seat roof terrace, open sushi and robata counters, private dining rooms, and lighting that shifts from calm lunches to late-night energy.

It’s the brand’s first site in the North of England, joining a line-up that already includes London, Toronto, San Francisco, Riyadh and Doha. The menu has been designed by Executive Chef Jordan Sclare, who has travelled extensively to Peru to sample local Nikkei cuisine and culture, combining Japanese techniques with Peruvian ingredients.

Signature dishes will include Sea Bass Ceviche, Nikkei Gyoza, Sato Maki Roll and Pollo Den Miso – a miso marinated chicken with carrot, daikon and yellow chilli yogurt. The famous Black Cod Aji Miso will also feature, along with King Oyster Mushroom Tostadas topped with pulled mushroom, smoked Aji Panca, guacamole, lime and coriander.

The space will also see bold graffiti-style murals created with a local artist, a year-round roof terrace with panoramic views, and two private dining rooms — one seating 12, the other 25 — both opening onto the terrace. A curated cocktail list will mix reimagined classics, Nikkei-inspired serves, and Manchester exclusives. Weekends will feature live music with details to follow closer to launch.

Working closely with Gary Neville and Relentless Developments, I knew the St Michael’s site was exactly what we were looking for as soon as I saw the plans. What Gary has created is vibrant, bold and sophisticated, everything we are as a brand. We are really looking forward to launching and taking over one of the most beautiful roof terraces in the city whilst bringing our new Nikkei dining concept to Manchester.
