COMING SOON: A Permanent Space for Flawd’s Pop-Up Bistro, Higher Ground

The popular wine bar has now finally secured a home for its restaurant on the corner of Faulkner Street and New York Street.

During the pandemic, the trio and brains behind Higher Ground; Richard Cossins, Daniel Craig Martin and Joseph Otway launched the restaurant as a four-month pop-up – but it was sadly halted as COVID-19 gripped the industry.

Unable to further the concept since, it has now been announced that the restaurant has found itself a permanent home in Chinatown on the corner of Faulkner Street and New York Street

The 3,000 sq ft space will seat around 50 covers, with the design incorporating floor to ceiling glass on two sides of the building, as well as a large island that will be shared between both the front of house and back of house teams. 

Offering mainly a la carte, Higher Ground will also launch a daily sharing menu showcasing seasonal produce from Cinderwood Market Garden. Another project from the trio, Cinderwood Market Garden now supplies a huge range of venues in and around Manchester, including Flawd.

Aiming to offer high quality food at affordable prices, bearing in mind the calibre of who is involved with the restaurant, Higher Ground’s sharing menus will cost around £45 per person for five to six courses. 

Speaking to Big Hospitality, Richard Cossins said: “We don’t feel like now is the time to be opening a tasting menu only restaurant.

“Flawd’s success has shown that an approachable, neighbourhood concept works well. It actually makes us question our original thinking. Starting with a neighbourhood restaurant has been the perfect entrance to a new food and beverage landscape.”

Located in the award-winning foodie district of Ancoats, Flawd was the starting point for the team, offering up a menu of dishes based on high quality produce accompanied by an endless list of expertly curated wines. 

Looking to the future, the three friends have big plans to make a memorable dent in Manchester’s food scene. With plans for two more ambitious projects pencilled in – a destination dining experience in the city and an educational countryside retreat – Richard, Daniel and Joseph are ready to explore the hospitality realms even further.

Richard and his team have built a solid reputation for providing extraordinary food and drink experiences all over the world as well as via their popup incarnations in Manchester, and we’re delighted that they have found a permanent home for their concept at Faulkner House. Their exceptional expertise and commitment to seasonal produce will bring very something special to this part of the city.”
