It’s hard to imagine a more perfect food than Chinese dumplings. In fact, during the time that I was living over there, right in the middle of nowhere, I don’t think I would have survived so long without them.
Even to this day I crave them, something that I’ve never been able to say about other Chinese dishes. Except perhaps a big bit of Crispy Duck.
They’re an absolute nightmare to make yourself though; the dough is difficult and they’re fiddly as f**k – meaning you’re more likely to just buy a bag of frozen ones from the Chinese supermarket than make your own. But, like most things, making them at home is SO MUCH better.
