This appetite and knowledge, from crustaceans to the freshest fish, has led to a more expansive menu at the restaurant – with new items all following Randall & Aubin’s practice of net to plate, going straight to the source, the fishermen, for the best quality produce.
This has led to the introduction onto the menu of Large Orkney Diver Scallops with cauliflower purée, braised creamed cabbage & sauce pistou (£21.00), traditional Bouillabaisse with mixed prime British coastal fish, spiced croutons & aioli (£14.50) and Prime Halibut (£24.85), that some regard to be the steak of the sea, all testament to the appetite Manchester has for seafood.
The exchange of rump steak on the menu for fillet steak (10oz) on the bone served with truffle dressed water cress & chef ’s potatoes (£30) and that they will now serve Prime Scottish cod fillet with caviar creamed potatoes, buttered mixed vegetables & sauce beurre blanc (£17.50) all show the refined tastes Mancunian’s enjoy.
Customers can dine with a clear conscience too as all Randall & Aubin meat is sourced from Aubrey Allen, so is farmed with freedom and respect, ensuring the best quality possible.
Co-founders, renowned Chef Ed Baines and restaurateur Jamie Poulton, are delighted that Manchester has embraced their restaurant and has a real appetite for the finest seafood they serve.
Ed Baines said, “The demand for Orkney or Cornish diver caught scallops mean they are now on the menu, in addition to our popular Manx Queenies. Our new links to Whitby will bring in more crustaceans and squid. Morecombe bay prawns will also appear on our newly priced daily specials menu. We work closely with British fishermen and continue to ensure all our seafood comes directly from the net to our plates.
