Real Junk Food Project appoints Mary-Ellen McTague as Head Chef

Award winning chef behind Aumbry joins the team at The Real Junk Food Project Manchester’s new “waste food” restaurant at The Wonder Inn on Shudehill.

The Real Junk Food Project Manchester are delighted to announce that Mary-Ellen McTague will be taking on the role of Head Chef at Manchester’s first “waste food” pay-as-you-feel restaurant, due to open in mid March at The Wonder Inn on Shudehill.

Mary-Ellen McTague was the proprietor and Head Chef of Prestwich institution Aumbry from 2009 – 2014, and Head Chef at 4244 Edge Street in the city centre. Mary-Ellen’s previous experience includes work at Heston Blumenthal’s 3 Michelin Star restaurant The Fat Duck, and The Sharrow Bay Country House Hotel in Penrith. Mary-Ellen will bring her considerable skill and experience to this not for profit project in the city centre, seeking to stamp out food waste and food poverty.

The Real Junk Food Project started in Leeds and has now expanded to pop up all over the UK. Real Junk Food is a network of projects sourcing food that would otherwise go to waste from wholesalers, supermarkets, restaurants and other sources. Wasted food is used to create amazing dishes, served to anyone and everyone, on a pay-as-you-feel basis. The project hopes to demonstrate the scale and senselessness of food waste, its huge impacts on our environment, and push big food businesses to waste less. While we campaign for our food system to be less wasteful, fairer and more sustainable, we also try to support some of our most vulnerable citizens. We serve all of our meals on a pay-as-you-feel basis because we believe that everyone should have access to good food, and to be part of our society – everyone is welcome at our table.
