Sheffield's Critically-Acclaimed JÖRO coming to Manchester for "Extraordinary" Asian-Influenced Supper Club

Presented by the team at Escape to Freight Island, Kantina has announced an exceptional menu which will be available throughout the weekender, from Friday 10th until Sunday 12th June.

The food and drink weekender will see national guest chefs, restaurants and bars pairing up with Escape to Freight Island’s existing traders for a one-off, limited and unique menu collaborations – available for one weekend only.

On Sunday 12th June, Kantina will host an exclusive supper club with Luke French, head chef and owner at the acclaimed JÖRO in Sheffield, which holds 3 AA Rosettes and Michelin Guide 2021 Recommended. Available with two seating options, at 1.30pm and 5pm, the JÖRO x Kantina menu is priced at £45 per person.

Known for combining local produce with Asian influences, Luke French’s supper club menu will present Tartelette with nori, smoked trout and yuzu; IOW Tomatoes with kimchi, grilled bread and vacche rosse; Orkney Scallop with nahm jim and Thai herb salad; Middle White Pork with Chinese spices and tsukemono; dark-milk Chocolate dark-milk with Jerusalem artichoke and coffee; and strawberry jelly Sweeties with barley miso caramel.

Brad Carter’s One Star Döner Bar will collaborate with Michelin-starred chef Tom Brown to showcase Squid Shawarma with seaside salad, oyster & garlic sauce and seaweed chilli sauce; and Salt ‘n’ Vinegar Smileys with cod’s roe.

Alongside this, also collaborating with Lap-fai Lee, One Star Döner Bar will showcase Char Siu Shawarma with sweet daikon carrot pickles and fermented chillies; and Salt ‘n’ Pepper Smileys.

The upscaled tacos from Madre will team up with AngloThai’s co-founder and head chef John Chantarasak. The menu will include Thai Fried Chicken Tacos with som tom slaw; Citrus Salmon Tostada with Thai chimichurri; Chiang Mai Nachos with queso fundido; and Mushroom Laab Tacos with black garlic and shiitake mole.

One Star Döner Bar will collaborate with Michelin-starred chef Tom Brown

The brand-new deep-fried and charcoal-grilled chicken concept, Lucky Foot, will pair up with Budgie Montoya who has been championing Filipino cuisine with his Sarap restaurant in London.

The menu will include Sarap Fried Chicken Wings; Chicken Inasal Thighs marinated in calamansi, 7up, ginger, garlic, lemongrass and annatto; Fried Chicken Sinigang Burger seasoned with sour sinigang salt, atchara, spicy mayo and sinigang dipping gravy; and Tater Tots served with banana ketchup, spicy mayo and sinigang gravy.

And newly announced Spasia Dinkovski, founder of Mystic Börek in London, will showcase Slow Cooked Lam Shoulder Slice with mature feta, creamed spinach and sour cherries; Taleggio Cheese Slice with burnt butter potatoes and green goddess leeks; Whipped Sheep’s Milk Cheese Slice with charred peppers, smoked tomato jam and pistachio; alongside dipping sauces Roast Garlic & Sesame, Green Chilli & Honey, Pomegranate Hot Sauce, and Preserved Lemon & Confit Garlic Crispy Chilli Oil.

Further announcements include the Sous Doo Ray’s where Voodoo Ray’s will be transformed into a kitchen serving up dishes from some of the most talented Sous Chefs in the country, including Alex Rothnie from L’Enclume in Cartmel, Nicola Robinson from Inver in Scotland, Fabio Magalhães from Brat in London, and Nephelie Coulon from Ottolenghi in London.
