The Stockport 'listening bar' now serving perfect ramen, gyoza and pickles

Among a crowded field of excellent independents, Odioba is one of Stockport’s stand-out haunts.

Located on the Underbanks (where else?) It’s three moodily-lit floors of exposed brickwork, Japanese-inspired cocktails, and sultry jazz emanating from a world-class sound system. And the name? It’s no accident it’s a homonym for ‘audio bar’ – they are truly serious about sound.

If there’s one thing the place has been lacking until now – it’s been the option to dine. ‘Uma’ to the rescue. The concept –  a small-but-perfectly-formed Japanese ramen menu – is now available Thursday and Friday from 4-8pm and Saturday from 12-8pm.

Devised by owner Nam (who you may have encountered at his much-missed Vietnamese restaurant in Ancoats, also called Nam), the Japanese-inspired menu is paired back. To begin or share you can enjoy gyoza of chicken and mushroom varieties, edamame and a rainbow-hued bowl of pickles.

Understandably, the main event is the ramen. They’re offering three varieties of broth: a clear shoyu, a rich red miso base and a creamy, sesame tantanmen version. Then you can go to town adding in mapo tofu, chashu pork and teriyaki chicken, alongside bamboo shoots, soy boiled egg and a fiery chilli oil.

Paired with their cocktail list, which includes the lilac, plum sake-based ‘Shiko’, and a fragrant, matcha oil-topped Kodama, Uma is a perfectly-executed addition to an already super cool spot. Stockport has never felt so sophisticated.
