Manchester institution Tampopo has been perfecting the Thai national dish for nearly 30 years. So that mix of sweet, salty, spicy and sour is legit – the real deal – thanks to head chef Patria Weerapan, who cloaks hers in the traditional, ultra-thin layer of omelette.
