When in Rome, do as the Romans do, as they say. And when in Sale Moor too. Chef and South Manchester pizza icon Valentina, who runs the ‘al taglia’ spot Ceresis, is branching out into supper clubs, presenting a feast of Roman flavours at the Royle Tearoom opposite her takeaway – which was nominated at this year’s Manchester Food and Drink Awards.
Having studied under celebrated chef and the most preeminent pizzaiolo in all of Italy – Gabriele Bonci, who Vogue magazine once called ‘the Michelangelo of Pizza – and at Le Scuole del Gambero Rosso in Rome, she will be serving up a four-course menu of timeless Roman classics, with all of the specially selected wines included in the price – from Cesanese del Piglio from Lazio to a Nobile Aglianico from the south of Italy.
You can expect dishes including baked aubergine rolls with stracciatella and speck, a traditional borlotti bean broth with pasta and crisp guanciale, and a breaded beef escalope with San Daniele ham and provolone, served with a reduction of Orvietto wine.
If you already know her superlative Roman-style pizza, it will give diners a chance to revel in Valentina’s skills behind the stove and her wonderful and welcoming hospitality, before exploring some ‘dulci’ to finish things off – namely a rich chocolate sacher torte with apricot pastry cream.
