One of Tokyo’s most talked-about ramen chefs is heading to Manchester for his first ever European appearance. Chef Takuro Yanase of Ramen Break Beats will take over New Wave for two days this October.
Landing on Saturday 3 and Sunday 4 October as part of New Wave’s third birthday celebrations, the takeover will give Manchester diners a rare chance to try Yanase’s ramen without having to make the 6000 mile trip to Tokyo.

Based in Meguro, Ramen Break Beats – a nod to Yanase’s other passion, for DJing – holds a Michelin Guide Bib Gourmand and has appeared multiple times in Tabelog’s Tokyo Ramen 100 Famous Restaurants, including in 2022, 2023 and 2025. Yanase’s cooking has also been recognised by the Tokyo Ramen of the Year awards.
The Michelin Guide has also highlighted Yanase as one of the chefs helping shape Tokyo’s pivotal ramen scene, making this much more than a standard guest-chef takeover.
For New Wave, it marks three years of serving ramen in Manchester with a genuine first: one of Tokyo’s acclaimed ramen specialists making his European debut in the city.
