Tom ‘Ronnie’ Aronica of the stellar Bench and Trattoria Maria in Sheffield steps into the kitchen at Winsome alongside Shaun Moffat for a one-off dinner built around a whole lamb, cooked and served from ‘the bleet to the feet’. Spring has truly sprung.
If you’ve come across either of those Sheffield spots, you’ll know what Ronnie is about. Big, confident flavours, a no-fuss approach, and food that leans heavily on seasonality, meaty instinct and generosity.
Things will start light, with bagna cauda and crudités, before moving into soft lamb tongue gildas, scrumpets with pickles, and a chunky scallop served with caponata.
The main event is, of course, a whole Swaledale lamb, served up sharing style with flatbreads, kebab shop-style sauces, salad and chips. It’s designed for sharing, passing plates, and getting ‘rayt stuck in’, as they might say that side of the Pennines.
To finish, there’s panna cotta with seasonal fruit too soothe and cleanse.
