Big Tray BBQ is Brewski doing what they’ve always promised they would: going all-in on low-and-slow American barbecue. This is a full-blown smokehouse built around imported US smokers, serious pitmaster energy and a menu that takes its cues from across the States rather than one narrow BBQ tradition.

The format is simple and unapologetic. Meats are smoked for hours, sliced to order and sold by weight, with everything from brisket and ribs to turkey, pulled pork and sausages making regular appearances. Burnt ends glisten, brisket chilli hits hard, and trays arrive piled high with smoke, sauce and sides. It’s designed for sharing, though nobody’s judging if you try to tackle one solo.

Sides matter just as much as the meat. Think jalapeño cornbread, mac & cheese, creamed corn, pit beans, slaw and pickles — all doing exactly what good BBQ sides should do: cutting through richness and keeping you going for another bite. There’s also plenty of thought for non-meat eaters, with smoked aubergine, tofu chilli and veg-led dishes that still carry that unmistakable BBQ depth.

The space itself leans into the smokehouse feel without tipping into parody. Counter service keeps things casual, trays hit the tables fast, and there’s an easy-going, roll-your-sleeves-up atmosphere that suits the food perfectly. Expect specials, matchday menus and the odd wildcard idea too — including plans for a smoked-meat take on the Sunday roast.
