Defiance Distillery

Set within the historic Spotland Bridge Mill in Rochdale, Defiance Distillery brings a bold sense of reinvention to Greater Manchester’s drinks scene. Its striking home, in one of the town’s classic red-brick mills, mixes industrial grit with contemporary comfort, creating a working distillery, stylish bar and event space all under one roof. Its relocation from Oldham, where the brand was founded, marks an ambitious phase for the independent brand, not only in terms of making more of the excellent booze it turns out, but also as a space to show it off.

Defiance Distillery was founded by Paul Sheerin, a passionate advocate for small-batch craft and uncompromising quality, not to mention Rochdale born and bred. His philosophy has always been to push boundaries while remaining true to the region’s industrial heritage — and the results speak for themselves. Defiance’s spirits have gained international recognition, with its Navy Strength Gin taking ‘Best in Show’ at the San Francisco World Spirits Competition, a rare accolade that firmly placed the distillery among the UK’s most respected names in gin. The wider range now includes refined rums, contemporary vodkas and an evolving series of limited editions that reflect Sheerin’s experimental approach.

Inside, the distillery’s aesthetic captures the balance between being a working distillery and a comfy place to go and hang out. Copper stills glint behind the bar, while long communal tables invite guests to settle in with a tasting flight or one of the expertly mixed cocktails built around house spirits, not to mention a very decent range of snacks and more sturdy fare – think great toasties, bratwursts and generous charcuterie boards.

A signature part of the Defiance experience is the Gin Academy — a guided session that lets guests blend their own bespoke gin from over forty botanicals, learning the craft process before taking home a bottle of their creation. Regular events, include live music and DJs, alongisde collaborations with local producers and food traders underline the brand’s community spirit, while the overall feel remains proudly independent. Defiance Distillery isn’t just a place to drink, but a space that celebrates the artistry and ambition behind every pour.
