Touch down in Terminal 2 and you’ll find Manchester Airport’s most ambitious dining project to date: Great Northern Market, a street-food-led hub designed to raise the bar for what travellers expect before they fly. Opening on Tuesday 3rd February, the market forms a flagship part of the airport’s £1.2bn transformation, taking pride of place on the ground floor of the departure lounge. It’s the first Manchester site from Airport Retail Enterprises, marking a major new chapter for the national operator.
What strikes you immediately is the scale and energy of the place. With more than 470 seats, it’s the largest food and drink destination the airport has ever launched, yet it feels unmistakably Northern in attitude — vibrant, informal, and buzzing with creativity.

That spirit runs right through the design thanks to Sheffield visual artist Marcus Method, whose bold, mural-led artwork flows across walls, menus and digital touchpoints, giving the hall a distinctive visual pulse.
At its core are six kitchens, each with its own flavour personality. Nashville Hot House sends out crispy buttermilk chicken drenched in unapologetically fiery spice. Black Iron Grill works the griddle hard with smash burgers and indulgent sides. Kouzina brings sunshine-bright Aegean cooking, while Palms Café layers aromatic Asian flavours with real depth. La Casita delivers punchy Mexican plates shaped with input from Merseyside chef (and the man behind Madre in Manchester) Sam Grainger, and Napoli Street Pizza turns out blistered sourdough crusts worthy of the name. Manchester favourite Gooey adds something sweet to the mix, with its signature cookies and doughnuts.

Behind the food is a committed Northern team led by Manchester-born Executive Chef Amy Tomkinson, who has developed every menu with regional collaborators to ensure authenticity across the board. And in a place where timing matters, the experience is geared towards calm: guests order from the table, settle in without queues, and let the team take care of the rest.
Great Northern Market is more than a pit stop — it’s a confident new benchmark for airport dining.
