Located in the historic Bonded Warehouse, Project Halcyon is set to the backdrop of an illicit warehouse bar from the turn of the century.

Each drink is lovingly crafted using the on site distillery and lab to make bespoke ingredients including their own house gin. Each drink pushes the boundaries of what is currently happening in the cocktail space and is made possible by their award winning bar team.

The offering includes exclusive monthly tasting sessions held in their still room, a dedicated absinthe parlor with bookable absinthe experiences as well as bespoke masterclasses covering the history of cocktails and their ingredients.
