Kick things off with a canapé of crispy chicken skins, with sorrel cream and preserved lemon paired with a French 75 cocktail on your arrival. This is a gin based cocktail which combines Sipsmith Gin with lemon juice, Champagne and sugar – just what you need to set off a delectable evening.
The first course will consist of gin cured, oak smoked sea trout with elderberry vinegar, blackberry, fennel on a rye cracker.
This will be matched with a signature Sipsmith cocktail- VJOP Aviation which takes its name from the violet hue of aviation fuel in the early days of aviation. It combines Sipsmith VJOP with Cointreau, Crème de Violette, lemon juice and sugar and is 100% plane-fuel free just for the record.
This will be followed by rabbit with Prosciutto, charred baby gem lettuce, heritage beans and watercress matched with a honey, lemon, orange gin cocktail called Bee’s Knees.
In true Modern British style, we will then take a little palate cleanser of passionfruit and mango sorbet with pineapple gold. I don’t know what pineapple gold actually is as such, but I imagine it is both sweet and shiny.
Finally, the evening will finish off with a roasted apple terrine served with celeriac parfait, pickled apple, buttermilk foam and herbs grown on the rooftop of The Lowry on their little micro garden.
Matching the salty-sweet flavours of this dessert is a sloe gin Negroni. The Negroni is hands down my favourite cocktail, and it makes the perfect aperitif after three delicious courses. The autumnal forest flavours of the sloe match perfectly with the woody flavours of the apple and celeriac.
