Signature Dish: The Vada Pav at Bundobust

A ‘Signature Dish‘ is something on the menu that is one of the reasons someone goes to visit – perhaps the venue is famous for that particular dish, or it’s so bloody delicious that everyone just seems to order one every time.

The first in our series ticks both of those boxes. It’s the fantastic Vada Pav at Bundobust, which manages to not only be a spicy burger, but it’s also veggie friendly and packed full of flavour.

A spicy potato patty sitting between a chilli smeared brioche bun is pretty much heaven, and something I think everyone should try at least once. Originating in Mumbai in the 60’s, Bundobust have managed to re-create this on-the-go speciality and are now serving it up in Piccadilly Gardens along with some of their brilliant craft ales.

So check out the video – I went down to speak to their head chef Gopi to see how it’s made, as well as getting my chops around one of them bad boys at the end.
