You feta believe it! Someone has invented a cheese cocktail - and it's brilliant.

This new cocktail is one of the city's most unique cheese-based creations (and certainly one of the tastiest!)

It seems that the people of Manchester aren’t content with just one weird but tasty cocktail – they want more and so the dedicated team of mixologists at Science & Industry have created a menu absolutely bloody full of them.

A quick flick through their menu uncovers a wealth of odd ingredients and weird concoctions – with their ‘YOU FETA BELIEVE IT‘ creation really taking the biscuit (or should that be cracker?)

Created by their brilliant Bar Manager Karl Stanley, the drink came during a particular slump in developing cocktails for the new menu. Working on it for six months already, Karl was struggling for inspiration and a chance conversation with mate turned him onto the idea of using memories or experiences as a guide.

Flicking through Facebook one day, Karl stumbled upon one such memory from a trip to Cyprus a few years’ prior – a particular Feta salad in a restaurant that came loaded with balsamic vinegar, tomatoes, onions and a red grape salsa.

Cogs began turning and Karl decided to wash some Pisco in Feta (a process known as fat washing) to create a twist on the classic Pisco Sour cocktail. Unfortunately, this still wasn’t right, and during a peer tasting and feedback event for the new menu it was clear that people wanted more ‘sour’.

So he turned his hand to the salsa from the salad, creating a Red Grape Shrub with red grape, honey and balsamic that would add more of a sour twang to the drink, as well as help bring out the tomato flavours and the creaminess of the feta. As they say – a classic was born.

The cocktail itself is rather unassuming to look at, topped with a little sprig of thyme for a final knock of the senses as it goes down your gullet.

I must admit that I wasn’t expecting it to be as good as it is – it’s a perfect balance of balsamic sour and cheesy creamy, without either one being too overpowering.

As is always the case with such creations – you really should taste it yourself. I’m going to go out on a limb and say that it’ll be one of the best cocktails you’ve ever tasted.
