Opening on Thursday 15th August, the relaxed space will bring a modern approach to food and drink, focusing on seasonality and the very best available produce throughout the year. Ingredients will be sourced from the most forward thinking producers creating innovative dishes cooked over coals.
Taking the very best of the seasons, Head Chef James Lord (ex-Manchester House) will be creating dishes such as Pine Smoked Duck, Pressed Potato & Brown Crab and some very special Lamb Skewers which are more than 2 days in the making.
Similarly, the whole drinks menu will mirror the seasons too, utilising both traditional and cutting edge techniques throughout. Adam Day has developed a truly natural drinks menu; pairing home-made ingredients with seasonal, sustainable and high-quality additions.
A range of low ABV cocktails, natural wines and craft beers will look to carry this ethos throughout the rest of the menu.
Starting on the ground floor, Wilderness Bar + Kitchen will be an engaging all-say space where you can walk straight in or book ahead and enjoy a carefully considered range of beers and house made highball cocktails on tap.
The first floor cocktail bar will offer a unique and intimate drinking experience where the bar will take centre stage. The space has been designed to remove barriers between those making the drinks and those enjoying them. A seasonal small plates menu will also be served.
In the basement will be a highly creative space – the Innovation Room – a place for chefs and bartenders to explore new flavours and techniques alongside guests. Set within the working kitchen, guests can sit at the table and experience a dedicated Tasting Menu served up by the Head Chef himself.
