Renowned chef Shaun Moffat, who has worked at a number of the region’s best restaurants, is opening the doors to his own place for the very first time. Called Winsome, you’ll be able to find it on Princess Street, adjoining the Whitworth Locke hotel.
Moffat will take on the role of Chef Patron for the very first time. He previously cut his teeth at the likes of Manteca, Hix and St.Leonards, becoming a star of Manchester hospitality and landing various accolades, including Manchester Chef of the Year.
Described as a ‘relaxed, guest focused restaurant with Northern hospitality at its heart’, Winsome will offer ‘thoughtful British cooking in the kitchen, old world wines on the shelves, passion, care and detail in delivery’.
And accompanying Moffat, there’s a top-flight team to make it happen. The drinks programme at Winsome will be led by Tom Fastiggi, previously of SCHOFIELD’S bar.
There will be a selection of hotel classics and familiar drinks alongside a strong no and low selection and some of Fastiggi’s own creations. Wine will also be a focus with a sommelier-served list focusing primarily on old world wines.
You’ll be able to enjoy Fastiggi’s creations in the stunning Atrium bar of Whitworth Locke, as well as in the restaurant itself.
Completing the team will be Owain Williams; founder of the renowned Belzan in Liverpool, Madre and Manchester’s Medlock Canteen amongst other notable hospitality venues across the North West.

Tom Fastiggi said: ‘The Atrium space truly gives a unique feel to this bar. The drinks will be familiar and a warm welcome will await all guests. It’s a great new addition to Manchester’s hospitality scene’.
Winsome is due to open in spring 2025.
