Autumn is here, and so are a range of seasonal ingredients that are cosy, comforting and warm. The new chef's choice menu at the Lowry's River Restaurant have a selection of dishes that complement the season this month; think Game, wild mushrooms and rich red-wine sauces.

Salt beef hash, treacle cured pancetta, fried quail egg, pickled beetroot
