Simon Shaw's Canto unveil opening date...

Canto, Simon Shaw’s much-anticipated second restaurant, is to open on Thursday 20th September 2018.

Occupying a prime position in Cutting Room Square in Ancoats, Canto will bring modern Portuguese cuisine back to Manchester city centre, under the direction of Head Chef, Carlos Gomes.

Following in the footsteps of award-winning sister restaurant El Gato Negro, Canto will offer a broad selection of seasonal small plates, or petiscos as tapas is known in Portugal, underpinned by larger dishes to be enjoyed on their own or shared.

The menu, which can be viewed here,  provides just a small taste of what is to come and features a series of traditional favourites served with a modern edge.

“It’s been a real labour of love” said Gomes. “Many of the dishes we’ll be serving have a real personal connection for me. It will be typically Portuguese and see a good selection of specials that rotate with every season.”

With less than a month until the opening, the team is busy putting the finishing touches in place. “It’s been on my radar to open a modern Portuguese restaurant for some time”, said Shaw. “The actual turnaround time, from us acquiring the site to fit out and now, the final stages of preparation, has been pretty quick however”, he added.

“It’s a brilliant location and perfect for what we want to achieve; an informal and relaxed offer, a real neighbourhood restaurant where you can drop in for a coffee, enjoy a spot of lunch or get together with friends over dinner. There are some top operators already doing great things in Ancoats, we’re looking forward to joining them and bringing something totally different to the city.”

Canto will be headed up by Carlos Gomes, supported by Sous Chef Jorge Ibarra and Junior Sous Chef, Victor Prieto, both from Barrafina. Joining from El Gato Negro will also be Junior Sous Chef Harry Doherty.

The neighbourhood restaurant will open six days a week serving brunch, lunch and dinner across the one floor. Locals and visitors to the area are invited to walk in, pull up a chair and enjoy a drink, with window bar seating lining the restaurant for those wanting to look out and soak up the Ancoats spirit.

For those on the move or fortunate to live on the doorstep of one of Manchester’s most exciting districts, Canto will also offer a take-out service on select dishes.

Reservations are open now, with bookings available from September 20th.
