Vermilion launches Indian-inspired summer menu in Manchester

Vermilion, the Manchester restaurant and bar known for its theatrical dishes and global influences, has unveiled a limited-edition summer menu paying homage to the diverse flavours of India.

‘An Indian Summer’ draws inspiration from Mumbai street food, family recipes, and coastal cooking, with Head Chef Siddhesh Raut aiming to evoke the ‘sizzle of street food’ and ‘the warmth of family kitchens’.

Dishes on the new menu include Kurekure Bindi Fries, Pav Bhaji, Samosa Chaat, Masala Fish, and curries such as Chicken Jalfrezi, Lamb Bhuna, and Panch Dal Tadka.

Seafood features in a platter of grilled seabass, prawns, and scallops, while desserts include Moong Dal Halwa, cardamom-spiced Kheer, and Payasam.

“This menu is a tribute to the flavours I grew up with,” says Siddhesh. “I wanted to take guests on a journey – from the crunch of a Pav Bhaji bun on the streets of Mumbai to the slow heat of the Lamb Bhuna, and the coastal freshness of India’s seafood.”

The menu can be paired with drinks such as Bangla Premium, Bombay Bicycle IPA, Thornbridge Jaipur, or non-alcoholic options including Iced Masala Chai and Lemon Iced Tea.
