Where The Light Gets In to collaborate with Northumberland Restaurant, Pine, for an Exclusive Dinner Dedicated to the Land

The Stockport and Northumberland restaurants are currently pioneering a sustainable, locally sourced approach to fine dining.

Recent winners of the UK’s Most Sustainable Restaurant Award, Where The Light Gets In took to Instagram this week to announce a one off collaborative dinner with Northumberland restaurant, Pine which will take place on Sunday 31st July

Pine is the debut restaurant of Cal Byerley and his partner Siân Buchan. Located in the heart of Vallum Farm between Prudhou and Matfen, the restaurant has an onsite kitchen garden and a focus on local, seasonal ingredients.

Sourcing most of its ingredients from the kitchen garden and foraging the spectacular Northumberland landscape is what drives the passion of Restaurant Pine to deliver its menu excellence, which celebrates the finest British ingredients. 

Taking to Instagram, Where The Light Gets In said: “We are delighted to welcome our Northern friends, Restaurant Pine for a collaborative dinner at WTLGI.

“Run from Vallum Farm in Northumbria, Pine is a restaurant whose commitment to local produce and sustainability mirror our own ethos and dedication to working with the land.

It’s relationships like this that create something special in the sharing of knowledge, with core values and excellent produce at the heart of the collaboration. The menu will be £95pp and an additional wine pairing can also be opted for on the night.”

Where The Light Gets In is a venue that already has a Michelin ‘Green’ Star under its belt, as well as the coveted Most Sustainable Restaurant Award it won back at the start of the month. 

The restaurant is commended for not only working directly with farmers and fishermen but also sourcing produce from its very own farm, ensuring that everyone has a true understanding of what it means to work on the land.

Produce, weather patterns and sea conditions dictate the menu, offering a balanced choice “that both nourishes the body and sustains our eco-system.”

The restaurant’s collaboration with Restaurant Pine is set to be an evening of sustainable dining, using the best of British ingredients to create an exclusive, one-off menu from arguably two of the greatest restaurants in the sustainable movement.
