Chotto Matte brings its globally recognised Nikkei concept to Manchester with a restaurant that’s designed to move through the day and well into the night. Set across the top floor of No.1 St Michael’s, it’s a large-scale, high-impact space with open sushi and robata counters, private dining rooms, and a year-round roof terrace that plays a central role in the experience.
The menu is rooted in Nikkei cuisine — a fusion born from Japanese migration to Peru — combining refined technique with bold, vibrant flavours. Raw dishes, sushi and ceviche sit alongside cooked plates from the robata grill, with a balance between lighter, citrus-led dishes and richer, smoky options. It’s a broad menu by design, encouraging sharing and repeat visits rather than deep focus on any single section.
Drinks are treated with equal intent. The cocktail list leans into both Japanese and Peruvian influences, reworking familiar formats with a house twist, while weekends bring a shift in pace as DJs and live music take over later in the evening. The atmosphere builds gradually rather than switching on all at once — a place that works for dinner, drinks, or staying put as the night unfolds.
Visually, the space is bold but controlled, mixing contemporary design with graphic artwork and warm lighting, all framed by expansive city views. It’s polished without feeling stiff, designed for groups, celebrations and long, sociable meals.
