We took a trip down to the lovely Whitefield, and although I was a little under the weather (self-inflicted), I soon perked up when I met Head Chef and Owner David Gale to run through the amazing duck breast dish.
Their locally reared Derbyshire duck breast is expertly seared, glazed in honey and served up with fondant sweet potatoes, orange zest carrots and veal jus. Always the consummate professional, David explained the steps in preparing and cooking the dish, as well as any potential pitfalls you may experience with cooking duck.
Served up, the dish not only looks fantastic but it tastes amazing too. The combination of sweet flavours mixed with the duck work perfectly well together, and I must mention the fondant sweet potatoes as being probably the best I’ve ever had. I could have eaten 10 more and still gone back for seconds.
