Danish-founded restaurant group Sticks’n’Sushi is set to open its first site in the North West next spring in Spinningfields.
It will take over the long-vacant site previously occupied by Iberica, and is expected to bring around 75 new jobs to the city.
The two-storey restaurant will span a ground floor dining area and mezzanine, and will feature a large L-shaped outdoor terrace, accommodating up to 246 people in all.
Sticks’n’Sushi, which has 16 restaurants in the UK, was founded in Copenhagen by brothers Jens and Kim Rahbek, together with Thor Anderson. The concept combines Japanese-inspired cuisine such as sushi, sashimi and grilled meat skewers with Scandinavian design.
The Manchester site will be designed by Berlin-based architects Diener & Diener, blending Japanese architectural influences with Nordic aesthetics.
The menu will include favourites like Ebi Bites – tempura shrimp with miso aioli, lime and chilli – and the Maki Maki selection of four signature rolls. Sharing platters will feature build-your-own handrolls, maki and sticks, alongside grilled dishes such as Shōyu Tebasaki chicken wings, miso-glazed black cod, and shrimp in gochujang and garlic butter. Drinks will range from sake and cocktails to Japanese teas, wine, and the brand’s own-label yuzu pale ale.

Sticks’n’Sushi is set to open in Spinningfields in spring 2026.
