A new Gordon Ramsay restaurant is set to open at Fairmont Cheshire, The Mere later this year as part of a major transformation of the historic country estate and hotel.
Gordon Ramsay Restaurants Global has partnered with the Cheshire resort to launch Gordon Ramsay at The Mere, which will become the hotel’s main restaurant when it opens this summer. The restaurant will be open to both hotel guests and visitors, with a menu built around the group’s flavour-led, modern cooking and a concept designed to reflect the character of the estate.
The opening forms part of a wider multi-million-pound refurbishment and expansion of The Mere, which is currently being redeveloped and rebranded as Fairmont Cheshire, The Mere. Plans include redesigned guest rooms, refreshed public spaces and upgraded wellness facilities, alongside a stronger focus on food and drink across the resort.
When complete, the hotel will join the Fairmont Hotels and Resorts portfolio as the brand’s fifth UK location. The partnership also builds on Fairmont’s existing relationship with Gordon Ramsay Restaurants Global, which already operates several restaurants at The Savoy in London including Savoy Grill, The River Restaurant and the Michelin-starred Restaurant 1890.
The Mere itself sits on the grounds of a historic estate first recorded in the Domesday Book in 1086. The new restaurant will add a major dining draw to the countryside setting as the resort looks to position itself as a leading luxury hotel in the North West.

The announcement also follows Ramsay opening Lucky Cat in 2023. The Asian-inspired restaurant and bar opened in the city centre, bringing Ramsay’s Tokyo-influenced concept to Manchester for the first time.
At the top end of King Street, in the grand former HSBC building, Lucky Cat combines a restaurant, bar and late-night lounge, serving small plates, sushi and cocktails in a space inspired by 1930s Tokyo kissas and Shanghai drinking dens.
Gordon Ramsay at The Mere is expected to open in summer 2026.
