Ancoats pub and dining room the Edinburgh Castle have announced the appointment of their new head chef, Gabe Lea, who will be launching a new menu of classic, seasonal dishes with nods to classic French cooking.
Lea’s impressive CV includes world-class kitchens such as Le Manoir aux Quat’Saisons under Raymond Blanc, The French under Simon Rogan and Northcote with Lisa Allen, and more recently Maya – which he helped land a spot in the Michelin Guide just weeks after opening. He will take over from Shaun Moffat.
His first menu, served exclusively in the upstairs dining room, will include a venison dish with fig, dark chocolate, hen of the woods and parsnip, a salt-aged pork with carrot, apple and sauce charcutière, a soufflé Suissesse with truffle, and a stunning sharing apple tarte tatin served with rum and raisin ice cream.

In the pub downstairs, diners can enjoy classic pub fare using quality ingredients. Expect a burger and fish and chips, but also a cheese and onion tart with Comté and walnut ketchup, and Scottish langoustines cooked over coals with garlic butter.
Speaking of his latest appointment, Gabe said: “I’m really excited to join the team at Edinburgh Castle and looking forward to what we can achieve together. The pub and restaurant have a great reputation and I look forward to building on that with classical dishes, great flavours and working closely with our suppliers to bring forward great menus in line with the seasons.”
