Brewski and American Pie founders James Daly and Steven Stockton‑King are set to open their third dining concept BIG TRAY BBQ by Brewski at Salford’s Quayside in early autumn.
Spanning over 5,200 sq ft, the new space will operate as a bold, counter‑service smokehouse inspired by the duo’s culinary travels across all 50 US states.

The offering will centre on meats served by weight, with standout dishes such as 16‑hour smoked brisket, hot honey jalapeño cornbread, jerk chicken sausage, ribs, and smoked birria lamb shanks.
A selection of homemade sides and signature sauces will accompany the smoky mains, delivering Brewski’s generous portions with added spice and flavour. The concept blends classic Texan BBQ traditions with modern “Nu Skool” smokehouse techniques.
James Daly and Steven Stockton‑King expressed their excitement about the launch, emphasising the importance of keeping the brand rooted in Manchester.
“We’re delighted to be launching our latest concept BIG TRAY BBQ at Quayside later this year,” they said, adding that it felt natural to remain in Greater Manchester for their next venture and that they aimed to bring something “completely new to Quayside’s growing food scene.”

Ben Hey, Asset Director at Quayside, welcomed the opening as a sign of progress for the waterside destination. He remarked that attracting such a well‑regarded local food brand reflects Quayside’s growing appeal and affirmed that BIG TRAY BBQ will add a truly unique offering for visitors and the community.
BIG TRAY BBQ will join Quayside’s expanding food and beverage line‑up, aligning with other recent additions such as the Kargo MKT food hall, Pizza Express, Turtle Bay, and more.
