Skof launches new crafted drinks menu alongside tasting experience

Chef Tom Barnes has introduced a new drinks programme at his Manchester restaurant, Skof, developed in collaboration with Zoe Burgess, founder of London-based drinks consultancy Atelier Pip.

The new selection has been designed to accompany Michelin-starred Skof’s 12 and 16-course tasting menus, with a focus on locally sourced British ingredients. Each drink has been created to reflect the same attention to detail as the food, and can be ordered throughout lunch and dinner.

Many of the cocktails are offered in two styles – ‘short and punchy’ or ‘long and lighter on the alcohol’. The Shiso Martini, made with Shiso Stoli Red, blackcurrant liqueur and Cocchi Extra Dry, uses shiso grown at Our Farm in the Cartmel Valley and can be lengthened with Fever-Tree tonic water.

The Honey and Malt Old Fashioned, made with Benromach 10 whisky, caramelised honey and hopped grapefruit bitters, includes Manchester honey and can be topped up with Skof Sidney Lager from Track Brewery. A Mince Pie Irish Coffee has also been added for the festive season.

Tom said: “Zoe has really helped the team think about how we can continue to push the boundaries at Skof. She brings an incredible depth of knowledge and context and has worked hard to get under the skin of what we do at Skof. I’m so proud to present this new range of drinks, I truly believe our guests will love them and they’ll bring a new dimension to the start of a meal in the restaurant.”

Zoe Burgess said: “Working with Tom, Max and the team, as well as the incredible range of produce they have available from their partner farms, has been a true pleasure. Matching their passion for flavour and the deep consideration for every element of their guest experience with my similar approach to drinks has meant a collaborative experience and a beautiful menu.”

Atelier Pip works with restaurants and hotels across the UK and Europe, including Emberwood in Bath, Artfarm in Bruton and Chishuru in London. Burgess also oversees the cocktail offering for The Standard hotels in London and Brussels.
